Pure Wild Spirits claims to have devised a new drinks category with the launch of Freya, created from distilled Birch tree sap foraged from the forests of Northern Europe.
Launched to the UK market in early November, Freya answers the demand from both on-trade and consumers for new products that balance sustainability and innovation.
Harvested once a year during early spring the birch sap is brought to master distiller John Walters of the English Spirit Distillery in Great Yeldham. It is here that birch sap is crafted in hand made copper pot stills into Freya; a clear spirit with a distinctive clean taste.
Pure Wild Spirits founder Dave Wallwork says: “Freya is truly innovative and a distinctive new taste - pure foraged birch sap from icy northern forests distilled into a new wild, full flavoured spirit - the response from mixologists and bartenders has been incredible. We have an exciting few months ahead introducing Freya to consumers as we start to build this new category.”
Freya launched on November 3 2016, with an exclusive event taking place at The Cuckoo Club, London. Freya is now available in a number of noted bars and restaurants including Barts, The Shed, Rise 46, Rabbit and Nutborne and to purchase online via Master of Malt.
