French winemaker Mirabeau and England's Vault Vermouth have collaborated on a limited-edition Rosé Vermouth, made using stock prepared for events in 2021 that were later cancelled.
As part of a company-wide effort to reduce waste, Maison Mirabeau was looking for a way to use up wine that had been canned for on-trade partners, who cancelled events due to the Covid-19 pandemic.
The Provence producer eventually teamed up with Vault Vermouth to create an aromatised wine from its 2019 Vintage Prét-à-Porter cans of rosé. Founded by restaurateur Dan Joines, Vault produces a range of English sipping vermouths inspired by the 'aperitif' culture of southern Europe.
Grape spirit from the production of Mirabeau's Dry Rosé Gin was used to fortify the vermouth. It was flavoured with a selection of botanicals that celebrate the south of France, including lemon, pink pepper, fig, rose petal and a homemade 'herbes de Provence' blend.

Dan Joines said: "At Vault, we are constantly reviewing how resourceful we can be, minimising our waste and upcycling anything and everything we can ... For this reason, it was so exciting when we came together with Mirabeau to transform their excess rosé into this rosé vermouth.
"I was so excited to explore the botanicals of the south of France, to celebrate the heritage of the wine as well as to create a botanical bill which complements Mirabeau's Dry Rosé Gin. We're so proud of the vermouth itself; it's got a lovely balance and floral palate, and dilutes really well."
