Copenhagen's Ruby owners launch distillery and debut akvavit

Adeline and Rasmus Shepherd-Lomborg, owners of Copenhagen-based bar Ruby, have announced the launch of Mælkevejen Distillery and its debut akvavit, Fury.

The new distillery has opened in Ørslev, a municipality south of Copenhagen, and has an event space for 150 guests and a café gift shop.

The distillery’s first release is Fury, an akvavit intended to celebrate and modernise the traditional Danish spirit. Akvavit is a protected drinks category, and therefore must be at least 37.5% alcohol and be made from a base of dill or caraway. Mælkevejen’s Fury has roots in the traditional with a caraway base, but adds tropical flavours of pineapple, coconut, ginger, lime, fennel and lemongrass.

The distillery recommends serving its akvavit paired with tonic, in cocktails, or served cold by itself. Ruby is now serving Fury in a new cocktail on its menu. Opened in 2007, Ruby’s menu is based around locally-sourced ingredients and changes regularly, following micro-seasons.
