Cambio Tequila launched by chef
New brand Cambio Tequila has launched its inaugural expressions in the United States. Founded by chef John de Rosiers, the brand aims to bring a “different viewpoint” to Tequila.
The brand says it is founded on “deep respect for Tequila’s traditions”, and seeks improve the spirit with high-quality production processes and innovative cask selections for ageing. Cambio’s Tequila Reposado is aged first for one month in Burgundy and Bordeaux casks, then receiving five additional months in French oak Chardonnay casks. The brand’s Blanco expression also spends time in used French oak wine casks, to give the spirit its own character.
Des Rosiers said: “Cambio, meaning change, is what drives us — the relentless pursuit to improve, build, and evolve. Our Tequila is the culmination of this dedication and a rejection of ‘good enough’ and ‘that’s how it’s always been done’. Every choice we made with Cambio was designed to show the true potential of the spirit.”
Cambio partnered with distillery Empresa Ejidal Tequilers de Amatitá to produce its spirit with the longer production and ageing times it envisioned. The brand uses a “low and slow” approach to roasting its piñas and fermenting and distilling the liquid, which it says brings out “greater floral and aromatic agave notes”.
Cambio Blanco and Reposado are both bottled at 46% ABV and available online or select locations in the United States at RRP US$49.99 and US$59.99 respectively.
